Mrs Sues Recipes

Recipe #1: Mrs Sues Home Made Bannana Puddin'
Ingrediants: 3/4 Cup Flour
1 1/2 Cup Sugar...........
1 Tblspoon Vanilla........
2 Egg Yolks......................
1 1/2 Qt Milk....................
2 Tblspoons Butter...........
1 1/2 boxes Vanilla Wafers
1 Large bunch bannanas........

Prepare a medium size pan by putting 1 layer of Vanilla Wafers, then 1 layer sliced bannanas.
Be sure to line sides of pan with Wafers.

Mix the milk, egg yolks, and vanilla in a bowl. Mix the flour and sugar in a seperatepot. Pour
the milk mixture into the pot, Mix well, add butter, and heat using a medium setting !!! Important!!!
Stir the mixture continuously until thick. If you don't it will Burn! You may substitute Equal, or sweet
and low for sugar. Bring somethingone armed to do... It takes a while for the pudding to thicken. Pour
pudding into prepared pan and refrigerate. (don't forget to lick the pot and Stiring spoon...........)

Recipe #2: Southern Style Corn Bread
Ingrediants:1 1/2 Cornmeal
1/2 Cup Flour...........
4 tsp Baking Powder........
1/2 tsp Salt......................
1 cup Milk....................
1 Egg (Beaten)...........
1/4 Cup oil (or bacon fat)
1 Large bunch bannanas........

Mix the dry ingrediants. Mix in the rest of the ingrediants. Stir only enough to mix.Fill greased
pan half full. Bake at 450 degrees for 25 minutes, or until a toothpick stuck inthe bread comes out dry.

Recipe #3: Chicken, Rice, Black Bean Salad (Martha Stewart)
Ingredients:

1 Cup Brown (or White) Rice Optional
1 Cooked Chicken (2.5 lbs) Shredded. (About 4 Cups)
1 Can (15.5 oz) Black Beans. Drained and rinsed.
6 Plum Tomatoes, Sliced (See Prep and Cooking Instructions)
4 Scallions, Thinly Sliced.
1 Jalapeno Chile, Minced. (Seeds and Rids Removed) (Or Bell Peppers)
1/4 Cup White Wine Vinegar. (Or Balsamic Vinegar) To Taste
3 Teaspoons Olive Oil (or to Taste)
1/2 Teaspoon Ground Cumin (Or To Taste)
Salt and Pepper
Mushrooms
Romaine Lettuce

Prep and cooking instructions:

Tomatoes: Quarter tomatoes lengthwise.
Lay quarters skin side down and slice out seeds
Slice flesh crossways about ¼ inch thick

Rice: Cook rice according to package instructions
Spread on baking sheet and refrigerate until cool.

Place cooled rice in a large bowl; add chicken, beans, tomatoes,
Scallions, jalapeno, vinegar, oil, cumin seasoned with salt and pepper.
Toss to combine and serve. With crushed tortilla chips on top. (Or refrigerate covered for up to one day)


My Recipe:

Place chicken, beans, tomatoes, scallions, bell peppers, lettuce, mushrooms, balsamic vinegar, oil, and
cumin in a large bowl toss until covered.
Vinegar, oil and cumin to taste add salt, pepper.
You can also add cheese if you like.
Crush tortilla chips to top.
